Wet ingredients:
2 large eggs
1 cup of Greek yogurt
1/2 cup of milk
⅔ cup olive oil
Dry ingredients:
2 ½ cups all-purpose flour (I used 1-1 gluten-free flour from Bob's Red Mill)
1T of baking powder
½ teaspoon baking soda
½ cup sugar (or monk fruit)
½ teaspoon of salt
1️⃣Add the dry ingredients to the wet ingredients
2️⃣Gently incorporate 1 ½ cups of blueberries
3️⃣Put in a muffin tin in muffin tins
4️⃣Fill 3/4 full with the mixture
5️⃣Bake at 375 for 18 minutes or until a toothpick comes out clean.
