Healthy Blueberry Muffins Recipe
Healthy Blueberry Muffin Recipe
Whether it's the youngest or oldest in your family you're trying to feed, they're perfect and they'll have no idea they're actually healthy!

Wet ingredients:
2 large eggs
1 cup of Greek yogurt
1/2 cup of milk
⅔ cup olive oil

Dry ingredients:
2 ½ cups all-purpose flour (I used 1-1 gluten-free flour from Bob's Red Mill)
1T of baking powder
½ teaspoon baking soda
½ cup sugar (or monk fruit)
½ teaspoon of salt

1️⃣Add the dry ingredients to the wet ingredients
2️⃣Gently incorporate 1 ½ cups of blueberries
3️⃣Put in a muffin tin in muffin tins
4️⃣Fill 3/4 full with the mixture
5️⃣Bake at 375 for 18 minutes or until a toothpick comes out clean.

Makes 18 muffins
